F is for Fresh Farm Food

Fresh. Food. And fast.
There is nothing like fresh produce. Crisp. Succulent, bursting with flavor.
Do you tend a garden or water deck pots? Either way, you know what I mean. Who doesn't wait for the season's first ripe tomato? My mouth waters, just thinking of it. Salsa. BLTs. Soup. And my favorite...
CAPRESE SALAD
Under a time crunch? Slice tomatoes and mozzarella ahead of time.
INGREDIENTS:
4-5 Tomatoes (I prefer Roma, not too large)
16 oz. mozzarella cheese
Fresh basil (chopped or whole, as you prefer)
Honey balsamic dressing of choice (most bottled versions are very good)
DIRECTIONS:
On a large plate (solid color is best for presentation), either:
alternate tomatoes and mozzarella in rows or in circular fashion (depending on circular or square/rectangular plate)
OR
place tomatoes on bottom layer and top with mozzarella.
Sprinkle with chopped or whole basil. Before serving, drizzle the balsamic dressing on top of tomatoes and mozzarella. Delightful and scrumptious!
Here in Wisconsin, it's way too early for fresh tomatoes...local ones, anyway. It's May and we're just past night freezing temperatures.
